  1. Soak couscous with the same amount of boiling water / chicken stock.  (e.g. put 1/2 cup of boiling stock broth into 1/2 cup of couscous)
  2. Leave in for 5 minutes, then add a bit of olive oil before fluff up the couscous.
  3. Dice / chop all vegetable ingredients:
  • Coriander
  • Cherry tomatoes
  • Cucumber
  • Dried figs
  • Red/Yellow peppers
  • Ripe avocado
  • Roasted almond
