妃排 6 兩(斬大粒)
番茄 2 個
馬鈴薯 2 個(約 10 兩)
洋葱半個
乾葱 2 粒
Ingredients
225 g pork spareribs (coarsely diced)
2 tomatoes
2 potatoes (about 375 g)
1/2 onion
2 shallots
醃料
胡椒粉少許
生抽半湯匙
粟粉 1 茶匙
Marinade
Ground white pepper
1/2 tbsp light soy sauce
1 tsp cornflour
調味料
老抽 1 茶匙
鹽半茶匙
黃砂糖 1/3 茶匙
Seasoning
1 tsp dark soy sauce
1/2 tsp salt
1/3 tsp brown sugar
1. 妃排洗淨,下醃料拌勻醃 30 分鐘。
2. 馬鈴薯去皮,洗淨,切塊,用水浸片刻,瀝乾水分。
3. 番茄去蒂,洗淨,切角。
4. 洋葱去外衣,洗淨,切塊;乾葱去外衣,洗淨,切片。
5. 燒熱鑊下油 1 湯匙,下乾葱及洋葱爆香,放入妃排炒勻,傾入滾水 2 1/2 杯煮滾,下馬鈴薯煮滾,用小火煮 15 分鐘,最後下番茄及調味料再煮 10 分鐘即成。
Method
1. Rinse the spareribs. Mix with the marinade and rest for 30 minutes.
2. Peel the potatoes. Rinse and cut into pieces. Soak in water for a moment. Drain.
3. Remove the stalks of the tomatoes. Rinse and cut diagonally.
4. Peel the onion. Rinse and cut into pieces. Peel, rinse and slice the shallots.
5. Heat up a wok. Add 1 tbsp of oil. Stir-fry the shallots and onion until fragrant. Put in the spareribs and stir-fry. Pour in 2 1/2 cups of boiling water. Bring to the boil. Add the potatoes and bring to the boil. Turn to low heat and cook for 15 minutes. Add the tomatoes and seasoning. Cook for another 10 minutes to finish.

老人家難吃帶骨的妃排,怎辦?
若嫌妃排骨多太硬,可改用略帶肥的梅頭肉,食味頗佳。
Spareribs have bones. It is hard for elders to eat. How to do?
You may replace the bony spareribs with pork butt that contains some fat. It is also tasty.
